Breakfast:
Steamed veggies w/chili, tea w/almond milk
(Had a craving for warm cauliflower and corn last night, and I still wanted them this morning. But I only have veggie mixes. Oh well. It still worked.)
Snack:
Cucumber slices, pumpkin seeds & rye crispbread, jalapeno & red pepper hummus
Late lunch:
Kale salad w/chocolate pb cinnamon apples
(Microwaved apple chunks with cinnamon, cacao powder and pb before tossing them with kale. Sweet, slightly bitter and salty with the wonderful aroma of cinnamon. Yum. Plus it looks really festive.)
Dinner with the flatmates at giraffe in Westfield Stratford City, London, England:
"Woodstock" Pie: roast veggies & three bean ragout topped w/sweet potato mash & cheesy garlic crumb crust, baby sprouts & apple salad
(The sprouts were incredibly difficult to eat because they kept going everywhere! And the salad dressing was too much. After half of the salad, I thought I was eating apple cider vinegar straight up. The pie wasn't bad, but it was basically like a thick tomato-based veggie pasta sauce topped with mash & cheese. I think they should have added more herbs to the tomato sauce.)
