Thanksgiving Dinner No. 1

Val makes an amazing spread every year one week before Thanksgiving.

Breakfast:
Cantaloupe, potatoes, quinoa porridge w/hemp seeds, cinnamon & spinach
Dinner:
Butternut squash & mixed greens quinoa salad, lettuce, potato bread roll (ate a quarter), vegan mashed potatoes w/black pepper, cucumber slices
(The vegan mashed potatoes weren't bad! And the quinoa salad was probably my favourite dish of the night: slightly sweet, nutty and savoury. Big plus for being light as well. I think its texture complemented the dense, uniform mashed potatoes quite nicely.)
Green beans, mashed butternut squash, cranberry sauce, stuffed acorn squash, kale (didn't eat), wild rice medley
(Mashed butternut squash is always a winner.)

Apple crumble pie w/vanilla ice cream & cinnamon (ate half)
(THE APPLE PIE HAS BEEN UPGRADED. SO AMAZING. I've always hated the goopy fake apple filling, but these are real apple chunks, which are infinitely better than goopy sugary cornstarch.)
Vegan pumpkin bread
(Nothing memorable.)
Pumpkin cheesecake w/oreo crust (had two small forkfuls)
(Better than the regular crust but still too sweet for me. The pumpkin flavour is also too subtle.)
Chocolate mousse (had a couple spoonfuls)
(So utterly dense that anyone who finishes this gets +1 points in my book.)

Asian Food Market Night:
Bulgogi, spicy pork belly, glass noodles, veggie rice cake (only had one veggie rice cake, gave the rest away)
(The rice cake was a bit spicy, artificially sweet and made me want to vomit. I did not like that flavour at all; the texture was also strange - it resembled overly dry and dense gnocchi.)
Lettuce, veggie egg roll (had a bite), pakoras, fried rice (didn't eat any of this except that one bite of egg roll)
(Could not possibly fit anything else into my stomach.)
Dorm Tea Time:
Smores
(The marshmellows weren't warm enough, but the one that I made Claire had the perfect texture.)
