Breakfast:
Watermelon slices, coffee, oatmeal w/spinach, hemp seeds, cinnamon & flaxseeds
(The watermelon tasted like it met Laila Ali in the ring and then was sliced for consumption.)
Lunch:
Three bean chili, cucumber slices, snap peas, green beans, chickpeas, roasted butternut squash, baby carrots, flaxseeds, tabbouleh salad
Falafel (picked out the yogurt sauce and didn't eat the wrap)
(First time I've seen falafels on the regular menu in Val and the line was ridiculously long, like 40+ minutes long. Extremely disappointing though; the falafels were more like a rock than some fried chickpea mixture. At least I got a full day's worth of hydration in while eating this.)
Snack during a seminar:
Kit Kat bar
Dinner:
Jalapeno cornbread, cucumber slices w/pepper, bell pepper, mac & cheese w/marinara sauce, jalapeno slices, corn on the cob, roasted sweet potatoes, baby carrots
Bread pudding (regular & vegan) w/cinnamon
